Springtime

When I think of Spring, I think of flowers, bees, ladybugs and butterflies.

These cupcakes were perfect for the birthday girl who has allergies! The flavour was my latest variation ~ dairy & egg free chocolate cake. The frosting was also dairy free.



One for the kiddies

I’m still experimenting with my dairy & egg free chocolate cake recipe but I think I may be close. This one was a hit with the kiddies. I call it the choc freckle!

Dairy & Egg free baking

My son suffers from mild to severe eczema and we recently discovered that the trigger for his eczema is food related. He tested positive to an egg white allergy (via skin prick tests) and also sensitivity to dairy (via kinesiology by my chiro). He is so sensitive that he picks it up from drinking my breastmilk!

Since finding out his food allergy & sensitivities, I have stayed clear from dairy and egg in my diet. This also means not being able to taste test my cupcakes. For a baker, this is an absolute nightmare! Dairy and egg are essential ingredients in any cake or pastry recipe. The fats and protein in dairy and egg respectively play their role alongside the gluten in flour. Not being able to taste my baked goods also throws havoc to my strict quality control standards.

As a result, I have been experimenting with some dairy and egg free recipes. I’m happy to say that I’ve come up with a chocolate cake recipe that passes the test. It’s superbly moist, so very yummy, and most importantly, free of any dairy and egg! Definitely an alternative that I will be adding to the range!

Temporary Hiatus

I must send my apologies for the somewhat lack of posts. As you know, our baby boy was born in January this year. Unfortunately, due to some birth complications, he was admitted into the neonatal intensive care unit where he spent what seemed like three very long weeks.

It has been an extremely tough time for us, and since having him home, we have been constantly challenged by a very unsettled baby who is having difficult adjusting to the big world! Gratefully, we have had plenty of support from our family and friends…and we definitely see the light at the end of the tunnel!

T&S Wedding

Samantha contacted me to create some custom made cupcakes & classic range cupcakes for her wedding reception. Her thoughts were to have the cupcakes displayed on the guest signing/gift table at the entrance of the reception so that people could admire and pick one up to eat on the way to the pre-dinner drinks. She was so lovely in complementing on my “beautiful pieces of delectable artwork”, and left the creative work up to me but gave a few suggestions on what she wanted.

I decided on creating mini cupcake toppers of things that typically represent weddings and love. Namely, bride and groom, wedding cake, white doves, love hearts, roses and just simply the word ‘love’. The colour theme was purple, white and silver.
