Cupcakes for Charity

See our mini cakes range at the “Relay for Life” event this weekend from 10am on Saturday 31st October in the Inner West at Canada Bay.

Relay for Life is an overnight community event where teams of 10-15 participate in a relay-style walk or run to raise funds for Cancer Council. It is organised by a local volunteer organising committee on behalf of the Cancer Council.

Mini cakes will be donating their cupcakes for this charity event. All sale proceeds will go to the Cancer Council.

Come along and participate, or just pop by to say ‘hello’. There will be entertainment and children’s activities, food and lots of fun!

Christmas Gift Packs

We’re currently working hard in the kitchen experimenting with our recipes for what will be included in our Christmas gift pack range. Included will be a light chocolate mud cupcake and a special fruit cupcake (not your traditional!)

I’m also enjoying hand making the mini sugar crafts that will be used as decorations on the mini cupcakes - Christmas trees, snow men, candy canes, holly, bells & angels…can’t wait for this festive season to arrive!

Cupcake Sizes

I get asked quite often how big my mini cupcakes are.

To illustrate the size, I have provided a photo with my mini cupcake and soon-to-be introduced tiny tot size in comparison with a 20 cent coin.

Left to Right (diameter x height):
20c coin - 2.7cm x 0.2cm
tiny tot - 3.5 cm x 2.5cm
mini - 4.5cm x 3.5cm

A Baker’s Tools

When I first started baking, I was relying on a small little hand mixer. It did the trick but was not very efficient as it didn’t allow me to do multiple tasks at the one time. I had to stand there and focus on creaming or whipping. The other disadvantage of the hand mixer was that it limited the ability to produce lots of air bubbles in the batter whilst creaming, which then affects the overall lightness and fluffiness of the end product.

As the volume of my orders increased, I borrowed my mum’s twenty year odd old Kenwood mixer. I have many fond memories of baking as a child with my mother, using the very same mixer. Whenever we baked, we had to turn off the TV as the noise of the mixer was unbearable..and the image on the tv was always distorted. It’s still in pretty good condition, and sure enough, it was still as noisy as I remembered.

My best investment in my baking adventures thus far is my KitchenAid mixer. I’m definitely in love. It’s quiet and efficient, has a splatter proof cover and creams/whips my mixtures & icing so light and fluffy. What more could a girl want…

Cupcakes in New York City

Whilst away on our USA trip, I made sure that I did some research into the already saturated cupcake market. Magnolia Bakery was one such store that I visited - made famous by the TV series ‘Sex in the City’. They were located in a very hip/trendy Greenwich Village and although we reached the bakery at around 6pm, it was still busy with customers buying treats for dinner time.

As soon as I stepped in the bakery, a waft of sweet buttery goodness filled my nose. It was very warm inside, and I could sense that fresh batches of cupcakes were baking for the next day of business. It was a ’self service’ system - pick the cupcakes you want and package them in the box yourself. I had trouble working out which flavour each cupcake was (as there were no labels), until a helpful assistant made her way to point out what were each of the flavours on offer.

I decide to sample three flavours - the famous red velvet cupcake, vanilla and their newly released cupcake which had a chocolate ganache filling.

We saved two and enjoyed them at Central Park the next day.
